At the Race Day screen in Single or HeadtoHead press Up Down Left Right White Up Up. Then use the horn to shoot.

High Suspension

At the Main Menu press Up Down Left Right White Left Right.

Mini Cars

At the Main Menu press Up Down Left Right White Down Up.

Wire Frame Cars
