You can get easy Insight by purchasing Madman’s Knowledge skulls from the Bath Messenger but only buy them when you do not need to level as they cost Blood Echoes. 
Manually Selecting the Season on the Animal Crossing DLC Track:

When you hold a specific button while selecting the Animal Crossing stage with A you will be able to select what season you play on. The buttons are as follwows: L for Spring R for Summer zL for Autumn zR for Winter.
