At the Main Menu hold Select L1 R1 then press Square Circle Triangle Circle Square.

Animal Ships and Shark Ship

Turn on the game and while the game is loading hold Select Start L1 R2. When the Copyright screen appears release the buttons.

Piranha Ship

At the Main Menu hold Select L1 R1 then press X X X X Circle Triangle Square.
